Guitar Hero... You are the best thing ever

Sean and I got it last night and I didn't let go of it until 12:30 a.m.

I woke up early (it's Saturday!) and played while Sean was at work. I kept catching a glimpse of myself in the mirror and just kept cracking up at myself holding the toy guitar controller. But I was on FIRE!!! I passed the 9 stages on the easy level, and I'm half way through the medium level. Think about my potential here! What if I just did this for a week straight? Should I then be able to pick up a real guitar and just go nuts?

Here is what my husband currently doing:

He got up for work at 3 am, and is super tired.... but that isn't stopping him from jamming though the night!!!

This is one of the few games I just didn't watch for some reason. Hmmmm...

Cannon Beach, Oregon

Sean and I were on the coast of Oregon this weekend visiting his parents at a beach house they rented out for the summer. I never realized how beautiful Oregon is...

Happy Hour at the Ninth Door


My sister and I were downtown Denver on Tuesday night and decided to try out the Ninth Door for a tapas happy hour. We entered the restaurant, sat at the bar and right off the bat we were asked the question of the night. Red or white... sangria. The red was a combination of acid and sweetness, while the white was smooth and sparkly. The white sangria I chose complimented our tapas wonderfully.

The first tapas, or small plate, was a slice of manchego cheese toped with a tiny dollop of tapanade and a brush of olive oil. The cheese was a bit smoky and creamy while the tapanade came though with a bright punch of tart and smooth olive flavor.

And the second plate was our favorite. You can’t beat a fried cheese ball, come on! But this wasn’t just any cheese. It was goat cheese coated in panko break crumbs and deep fried. After being fried it was topped with a honey chili sauce. The tart goat cheese in combination with the sweet honey chili sauce was amazing. And the crunchy panko added the perfect texture to the dish.

Since my own trip to Spain I haven’t found any tapas bars that can compare, until the Ninth Door. I can’t wait to return. Preferably at happy hour...

Caribbean Curry

It was mojito night at the Bohling residence, and I was out to find a perfect meal to accompany our yummy mint flavored concoction.

I was super excited that this was a chicken stock base, and not a coconut milk base. Though, if you are in the mood for coconut milk and can afford the calories, go for it and make the substitution!

The only switch I made to the recipe was we sliced a Jalepeno and a Serano chile instead of a Scotch Bonnet. Make sure to take these out before serving... or you can leave them in and give them to a lucky person at the table. Then watch them start to sweat...

The flavors of the chile were balanced by the sweetness of the potato. And the pork became very tender. All the while, we sipped on our beverages that inspired us to look up this amazing dish.

We served it with rice, but it was a bit too starchy for me. I would have rather had it as is. This would make an amazing vegetarian dish sans the pork...
